A connoisseur knows the difference between good and very good — and that second gap is the hard one. Anyone can tell a fine meal from a bad one. It takes years to taste two fine meals and say which is better, and why. The drawing gets the joke exactly right: a man in a bow tie holds a treasure map in one hand and a plain sandwich in the other, and he is studying the sandwich the same way. That is the word. A connoisseur treats a small thing as though it deserved a map. The French root simply means one who knows — and knowing, here, means having tasted enough to compare.
