Whichever order they are named in, the smaller comes off the greater.
The difference between two numbers simply means how far apart they are. Because distance can't be negative in basic subtraction, the smaller number always comes off the greater number, no matter which one is named first.

Add the subtrahend to the difference and you should get the minuend.
To check your difference, simply add the subtrahend (the number you subtracted) and the difference (your answer) together. This sum should be exactly equal to the minuend (the top number you started with).
